Hidden Brewery has big plans for The Chough

February 4, 2007: The Wiltshire-based Hidden Brewery has acquired its fourth pub, The Chough in Salisbury.

The brewery estate is growing rapidly, the comanyhaving also taken on The King's Arms in Thornford, Dorset, in October 2007. The Chough will be the firm's largest pub, covering approximately 7,000 square feet over five levels, although only two levels will be open to customers.

Michael Woodhouse, from The Hidden Brewery, said: "We are very proud to be an independent brewery and it was great to finish 2007 on such a high note.

"The Chough is a very exciting place with an incredible amount of space, and we have lots of plans for menus, music, clubs, entertainment, WiFi facilities and, of course, real ale.

"We will be having a launch event once our refurbishments are complete and are very much looking forward to raising a pint with locals, regulars and visitors to Salisbury."

The Chough is situated in the market square of the historic city of Salisbury and parts of the building date back to the 1300s when it was an old coaching house. It became an inn during the 16th century and many of traditional features have been retained, which gives the interior its character and warm, welcoming atmosphere.

The Hidden Brewery team plan to use space inside and outside of The Chough to create a variety of different areas to suit different customers and times of day. One of the main evening themes will be to live music, including jazz, blues, folk and rock.

There will be a large lounge area with cosy sofas, comfortable seating and an open fire for relaxed coffees, patisseries and drinks, after-dinner night caps, relaxed reading and informal meetings, with internet facilities. The downstairs bar is being refitted to create an attractive place to meet, and the surrounding spacious seating area will be used for lunches, evening drinks, nibbles and relaxed dinners. Upstairs is a larger restaurant area with original wooden oak beams and listed windows, and room to cater for private functions.

The real ales will include guest beers, and there will be a variety of food offerings.
