Brewery's food offerings are hot stuff

February 14, 2008: Witney-based Shaken Oak Products, a leading manufacturer of hand-made mustards and member of Heart of England Fine Foods, has joined forces with the Chiltern Brewery, near Aylesbury, to produce two exclusive speciality mustards for sale in the brewerys shop.
A chance meeting between brewery proprietor Richard Jenkinson and Shaken Oak Products boss Bruce Young led to an invitation by the brewery to make some sample mustards to complement its range of food products using Chiltern Brewery beers.
After tasting a variety of sample mustards made using Chiltern Ale, Beechwood Bitter and hop leaves, Richards sons, Tom and George, who now run the brewery, decided to choose Chiltern Ale and Garlic Mustard and Beechwood Hop Leaf and Honey Mustard as the two best samples to develop and sell alongside their other beer-related products.
Chiltern Ale and Garlic Mustard is a medium-strength wholegrain mustard with a hint of garlic and liberal amounts of light and refreshing Chiltern Ale. It goes well with cold meats and vegetable dishes, and also as an ingredient in sauces and salad dressings.
Beechwood Hop Leaf Bitter and Honey Mustard is a stronger mustard using the brewerys flagship bitter. A pinch of Fuggles hops and additional honey are added to the mustard mix to give a well-rounded taste, a good accompaniment to cold meat pies, sausages and steak.
Bruce Young said: Its been a very exciting venture for us to develop these mustards for the Chiltern Brewery, which has a reputation for producing not only fine beers but also quality products to complement those beers.
Chiltern's head brewer, Tom Jenkinson, added: We are extremely pleased with the results produced by Bruce. He took considerable time to make unique and tasteful mustards using our beers and were really impressed with the flavours hes achieved.
The Chiltern Brewery, based at Terrick, near Aylesbury, in Buckinghamshire, launched its first beers in 1980 and is the oldest working brewery in the county. The microbrewery has, in recent years, concentrated on selling draught beer direct from the brewery and developing sales of bottled beers. It also organises brewery tours, has a well-stocked shop and sells draught and bottled beers.
Shaken Oak Products, at Shaken Oak Farm, near Witney, in Oxfordshire, supplies mustards and preserves to a range of outlets in the Thames Valley and Midlands. It also manufactures own-label mustards for breweries and cider producers.
